Coffee Cake with Oat Crumble

Ingredients
Oat Crumble
1.5 C Old Fashioned Oats
3 tbs Butter
1 tsp Cinnamon
1/2 tsp ground nutmeg
1/2 C Brown Sugar
Cake
1 C Unsalted Butter
1 C Granulated Sugar
2 Eggs
1 C Plain Greek Yogurt
2 C All Purpose Flour
1 tsp Salt
1 tsp Baking Powder
1/2 tsp Baking Soda
Directions
1. In a saucepan on medium-high heat, toast 1 1/2 cups of oats in 3 tablespoons of butter. Stir occasionally to avoid burning and toast until golden brown.
2. Remove from heat and set aside to cool while preparing the batter.
3. With a mixer, cream together 1 cup of butter and 1 cup of sugar until light and fluffy. Add 2 eggs and 1 of plain Greek yogurt
4. In a separate bowl mix together 2 cup of flour, 1 tsp of salt, 1 tsp of baking powder, and 1/2 tsp baking soda.
5. Add the dry ingredients to the wet and mix until just combined. Do not over-mix.
6. Once the oats have cooled, combine with 2 tsps ground cinnamon, 1/2 tsp ground nutmeg and 1/2 cup light brown sugar.
7. Prepare a 9”x5” loaf pan with oil and or parchment paper. Add half of the batter to the pan. Top with half of the oat mixture. Then repeat the process.
8. Bake for 35 minutes or until a toothpick or fork come out when inserted.
9. Allow to cool and enjoy with a glass of Equity’s Rise Up Roasted Coffee Stout!
